Ingredients

  • 2 cups 475 ml heavy whipping cream
  • 3 oz. (23 cup) 85 g (160 ml) fresh raspberries or fresh strawberries or fresh blueberries
  • 2 oz. 55 g chopped pecans
  • ½ ½ lemon, the zestlemons, the zest
  • ¼ tsp ¼ tsp vanilla extract

Making low carb simple

Instructions

  1. Pour the cream into a bowl and whip with a hand mixer until soft peaks form. Add the lemon zest and vanilla towards the end.

  2. Add berries and nuts to the whipped cream and stir thoroughly.

  3. Cover with plastic wrap and let sit in the refrigerator for three or more hours for a firm mousse. You can also enjoy the dessert immediately if you don't mind a less firm consistency.

Tip

We like a blend of raspberries and blueberries. What do you like? Try any combination — strawberries, cherries, blackberries, or red and black currants.

    Is there something wrong with artificial sweeteners while doing Keto? Would love to know. Thanks.

    Just made this and OMG it is sooo good! I made 3 servings. I don't miss the sugar, however that may be because I added 1/2 tablespoon of Swerve OOPS, Lol! .... added 1/2 teaspoon of orange zest, no orange; had no lemon. I also blended my strawberries a bit to de-chunk them since they were frozen. Still tastes absolutely delicious! Will definitely be making this again... and again. Hope I didn't throw anything off by adding the sugar substitute and the orange zest.
    Can anybody let me know what you think about that? The macros and all. I'd greatly appreciate any comments and/or feedback.

    Hi, I have been on keto for 3 weeks now and have no end to headaches. I have lost 7 lbs but I end up eating a slice of bread, little pasta or a few tablespoons of rice just to get rid of the headaches. My blood pressure has also gone up. I just started drinking two gatorade without the sugar which helps a bit since yesterday. I am drinking lots of water. Are there just some people who do better eating more carbs? I am willing to give it another couple of weeks but this is the only way of eating that has actually kept me from thinking about food all the time. It would be a shame for me to discontinue as I feel this actually might work
    Any Suggestions?

    That sounds like keto flu, which is generally due to low electrolytes and easy to fix without resorting to carbs. Here's a good article on our website. The higher BP may be due to the pain of the headaches. If you are on any medications, please check in with your doctor to see if dosage needs to be adjusted.

    Don’t stick with just plain food! That would be a shame! I am a chef, I suggest wizzing up a few raspberries into the cream some of the cream, and then fold the rest of the cream into that? Or do so with some raw cacao? and that could take away the harsh plain flavour? Just an idea. Also I like to put things in my “sweet food” just to trick my senses, like cinnamon as it is usually paired with sugar and it is so good for you! Don’t give up!

    This recipe sounds delish. My mum used to make it with raspberry but instead of cream, she used eggwhites + sugar. This is a great alternative to the sugar so I will definitely make it over the weekend.

    I fail to see how you would be losing weight with eating such rich food in abundance. Sure, you've cut down carbs massively but on the other hand you have added massive amounts of fat some of which is cholesterol ridden. This doesn't sound like a good diet and goes agains my sensibility. No offence meant, just convince me.

    It absolutely makes sense that you would lose weight on a low-carb diet (if you eat less calories than you burn). Fat doesn't make you fat. It's the inability to burn fat that makes you fat. If you eat high-carb foods, your blood sugar level rises tremendously and a lot of insulin is released which blocks your ability to burn fat. In addition, all carbs are transformed into glucose by the body, and the excess glucose that's not used for energy is stored as glycogen and fat. In fact, carbs are non-essential nutrients. You can get all your energy from fat and protein.

    I think if you look at the information available on this site you will find that if you are trying to lose weight it is recommended that desserts such as this are kept to an occasional treat rather than an everyday food.

    I'm wondering the same. This recipe is nothing more than homemade whipped cream with nuts and berries in it, and homemade whipped cream does not 'harden' or set in the refrigerator, it collapses. Adding mascarpone cheese (one 8oz tub per pint container of whipping cream) will help it to retain shape longer, but it will still neve get any harder than when first whipped. The only way it would set is if you added something to give that effect, like gelatin or a custard base.

    Agreed. I don't see how putting it in the refrigerator "hardens" it up. It's just whipped cream. I'd probably try some sugar-free pudding or "jello" mix added in, and I've seen recipes that also incorporate a couple of ounces of cream cheese to get the mousse consistency.
