If you’re British then you will probably envisage the bright red and yellow iconic wrapper of the Caramac right away, not to mention it’s creamy burnt caramel like taste… and then you will of course remember the bucket load of sugar that went into it all, and sick you felt afterward. Well now you can relive the memories (or create new ones) with my Paleo Raw ‘Caramac’ Bites except without the sickness! These little bite sized pieces of joy are flavoured by lucuma, vanilla and maca and are set in a base of pure raw cacao butter. This is every Paleo, raw food, Vegan & gluten-free diet follower’s dream all rolled into tiny bite size buttons.

This recipe will require you to have a little chocolate mould andalso asmallsilicone chocolate pouring jug– believe me one of these is a life saver!

I made these using Naturya Lucuma Powder & Maca Powder.

Yields: 15 bites

Preparation Time: 10 minutes (plus 1-2 hours setting time)

Cooking Time: 10 minutes

Ingredients:

100g cacao butter
1/4 cup lucuma powder
1 tbsp/15ml vanilla extract or 1/4 tsp vanilla powder
1 tbsp/15ml maple syrup
1/2 tbsp/7.5ml maca powder
Generous pinch of Himalayan pink salt

Method:

  1. Start by placing your cacao butter in a medium sized heatproof bowl, over a small pan of boiling water to make a bain-marie. Keep on a low heat and stir frequently until fully melted.
  2. Whisk in the remaining ingredients until you have a smooth mixture. Remove the bowl from the heat and place aside for 5 minutes to cool a little.
  3. Once cooled give the mixture a good whisk again – I find using an Aerolatte type whisk works the best! Transfer the mix into your silicone pouring jug.
  4. Pour your chocolate into each of the indentations within themoulds and place into the freezer for 1-2 hours until fully set.
  5. Remove from the freezer and carefully pull away the edges of each indentation and then gently push the chocolate upward at the same time. Repeat until all chocolates have been removed and either eat straight away or store in an airtight container in the fridge. These are best enjoyed when they have been left at room temperature for 10-15 minutes.

    a tablespoon of vanilla extract? That seems like a lot.
    Am just making this and trying to calculate how many vanilla pods to use – that would be equivalent to 3 whole pods…

      Hi Billy, thank you for your question. It would be an equivalent to 1.5 pods – 2 tsp of vanilla extract is the equivalent of 1 pod, depending upon brands of course. Just be aware that the overall flavour will change when using vanilla pods. It’s supposed to be the healthy equivalent of a cheap chocolate. Let me know how you get on and thanks for stopping by.     Well, I made it with the pods (I have a vast quantity of vanilla pods) and as you say, it did change the overall flavour – the consensus of everyone who tasted them was that they tasted exactly like those cherry liqueur chocolates you get at Christmas, only less sickly. Which was unexpected, but y’know, another good alternative. Everyone loved them, I hasten to add.
    I have just made a second batch using Madagascan vanilla extract and they are perfectly Caramac-y. Thanks for a fab recipe.

      Hi Margie, apologies for the late reply and thank you ever so much for your comment. You can omit the Maca powder as the lucuma makes for the bulk of the flavour. Maca just gives it that slight biscuit/cookie taste. You could also sub for mesquite if you have that available 🙂
