These vegan copycat girl scout samoas are LEGIT. They are the real deal and they came out freaking amazing. I used to be a girl scout and let me tell ya, I spent way more time eating the cookies than anything else. I was supposed to be selling them but I was busy eating them. You could always find me with a box of thin mints in one hand a box of samoas in the other hand.

Girl Scout cookies are addicting and so delicious. I had to make a vegan version of these that are made with healthy ingredients.

How do you make Vegan Copycat Girl Scout Samoas?!

This is a no-bake recipe meaning these do not go in the oven! Could it get any easier? First, you’ll addthe coconut into a food processor. Add oats. Blend for 30 seconds.

Add the dates, vanilla and salt. Blend until it’s completely combined. It will be a crumbly texture but will stick together when rolled into cookies. Make cookies with 2 tbsp of the cookie dough. Form balls then shape into a flat round cookie. Place them on the baking sheet. Use a straw to make holes in the center. Freeze for 10 minutes.

Melt dark chocolate chips by microwaving them in 45 second increments until melted, stirring as you go. Dip the bottom of each cookie in melted chocolate and place back on the baking sheet. Drizzle chocolate on top as well using a spoon.

Freeze for 15 minutes then enjoy! Store in the fridge.

A few important tips:

  • Make sure to prep a baking sheet with parchment to keep the cookies from sticking to the pan. This will ensure that when the chocolate hardens, you will be able to easily remove them.
  • Freeze the cookies before adding the chocolate so they firm up and they’re easier to handle. Freeze again for 15 minutes after adding the chocolate. Then enjoy!
  • Store the samoas in the fridge for best results. Do not store on the counter as the chocolate will melt!
  • You have to toast the coconut to give these the right texture and flavor. Toasting them in a pan on the stove is the easier way!

Do these actually taste like the original samoas?

Yup. I can promise you they 100% do! I tried them and couldn’t believe it. As having been a girl scout myself and having eaten my fair share of samoas, I was shocked that they tasted almost identical. My fiance then tried them and he too couldn’t believe how delicious they are. My mother-in-law tried them and she said “these are a home run”! She said that they’re one of the best desserts I’ve ever made. So yes, you can expect them to taste very similar to the original! You will be pleasantly surprised what dates can accomplish.

What makes these healthier than the original cookie?

They have no added sugar besides the dark chocolate, the only sweetener in the cookie itself comes naturally from earth’s candy, medjool dates! Medjool dates are actually like caramel, they are so gooey and perfect. Also, they are gluten-free (but make sure to get GF certified rolled oats if you have celiac disease), have no added oil, and are totally plant-based. These make the best little healthy treat for a snack or after dinner. Samoas typically have vegetable oil, milk, tons of added processed sugar and other additives.

the ingredients

  • 1 cup toasted shredded coconut
  • 1 cup pitted medjool dates about 12
  • 1/2 cup rolled oats
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3/4 cup dark chocolate chips

instructions

  • Toast coconut shreds in a pan on medium heat until golden brown and toasted. Stir constantly otherwise it will burn. This will take about 5 minutes.
